Whole Wheat Summer Squash Bread

Makes 2 Loaves

Ingredients:

3 eggs

1 1/3 cup sugar

2 cup grated yellow summer squash

1/2 cup canola oil

1/2 cup unsweetened applesauce

2 tsp. vanilla extract

3 cups white whole wheat flour

1 tsp. salt

1 tsp baking powder

1 tsp. baking soda

2 tsp. ground cardamom

1/2 tsp. cinnamon

1/4 tsp. ginger

1/4 tsp. ground cloves

1. Preheat oven to 350º.  Spray 2 loaf pans with nonstick cooking spray.

2. Beat eggs until foamy.  Add sugar, squash, oil, applesauce and vanilla. Mix well.

3. In separate medium bowl sift together flour, salt, baking powder, baking soda and spices.

4. Add dry ingredients to egg mixture and mix; do not over mix.

5. Pour batter into loaf pans and bake in 350º oven for 48-55 minutes until lightly browned and inserted toothpick comes out clean.

6.  Cool loaves in pan for 10 minutes; remove from loaf pans and cool on wire rack.

King Arthur flour has the White Whole Wheat Flour in both the regular and organic versions.
